Years ago, when I lived in Nevada, a good friend of mine gave me a recipe for "Forgotten Cookies". I have long since "Forgotten" about them until this year, when I started on a diet, and wanted something yummy as a treat, that was mostly on my diet, and very low sugar and calories. Well, I put together my own version of this recipe, and thought you might like them, because they are green and great and easy cookies for St. Patricks Day treats. They are crunchy and soooo good! Only a few ingredients too and fat free (unless you count the Ande's mint pieces that are in them) OOOHH!
Enjoy and have a fun St. Patricks Day and remember to wear green so you don't get pinched!
